Ingredients
1 Cup bulgur wheat
1 Grated carrot
1 Red onion
1 Red pepper
Stock cube (optional)
1 Tbsp tomato paste
1 Tbsp pepper paste (optional)
1 Tbsp mixed dried herbs
Instructions
Heat olive oil in a pan over medium heat. Add the sliced onion and sauté until soft and translucent. Add the diced peppers and cook for a few minutes until softened.
Add the grated carrot and cook for another 2-3 minutes until soft. Add tomato paste with a little water and cook for 3-5 minutes.
Stir in the bulgur, coating it with the tomato mixture. Let it toast for a minute to enhance its nutty flavour. Pour in the hot water or broth, add salt, pepper, and other spices. Stir once, cover, and reduce the heat to low.
Let it simmer until the liquid is absorbed (about 30 minutes). Remove from heat and let it rest, covered, for another 5 minutes. Serve warm with yogurt, grilled meat, or a fresh salad.
