Easy Baked Chicken Thighs with Lemon, Rosemary & Red Onions

Some of the best dishes come together with just a handful of simple ingredients. This baked chicken dish is exactly that—easy to prepare, full of flavour, and perfect for a cozy weeknight meal. The combination of lemon, rosemary, and red onions creates a beautifully aromatic base, infusing the chicken with bright and earthy notes while keeping it juicy and tender.
Ingredients:
6 bone-in, skin-on chicken thighs
2 large lemons, sliced
2 sprigs fresh rosemary
1 large red onion, sliced
1/2 cup water
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
In a baking dish, arrange the lemon slices, rosemary sprigs, and red onion slices to form a flavourful base.
Place the chicken thighs on top, skin-side up, and season generously with salt and pepper.
Pour 1/2 cup of water into the dish to create steam and keep the chicken moist.
Cover the dish with foil and bake for 45 minutes.
Remove the foil and continue baking for another 15-20 minutes, or until the skin is golden and crisp and the internal temperature reaches 165°F (75°C).
Let it rest for a few minutes before serving.
