Ingredients
For the filling
4 Cups of sliced peaches
1 Tbsp lemon juice
1 Cup sugar
For the batter
1 Cup self-raising flour
1 Cup sugar
3 Tbsp baking powder
A pinch of salt
1 Cup milk
1/2 Cup melted butter
Cinnamon
Instructions
Place the peaches, 1 cup of sugar, and lemon juice over very low heat. Cook gently until the sugar has fully melted and the fruit has softened slightly.
TIP: Keep the heat low to prevent the sugar from burning.
To prepare the batter, combine sugar, flour, baking powder, and salt in a large bowl. Add the melted butter and whisk until incorporated, then pour in the milk and mix until smooth.
Pour the batter into a deep baking dish—I use a 30cm x 30cm dish. Gently pour the cooked fruit over the batter, then sprinkle with cinnamon. Bake at 180°C (356°F) for 40–45 minutes until golden and set.
Serve warm or cold with ice cream or whipped cream.
