Ingredients
85g softened butter
50g soft light brown sugar
1 tbsp golden syrup
1 tsp vanilla extract
75g self raising whole meal flour
½ tsp bicarbonate of soda
½ tsp salt
75g porridge oats
30g raisins (or a mix of dried fruit such as cranberries, apricots)
Instructions
Preheat the oven to 180°C (160°C fan) and line a baking tray with baking sheet.
In a food processor mix all the ingredients.
Divide the dough into 12 equal balls and place them on the prepared baking sheets, leaving space for spreading.
Gently press each ball down to slightly flatten, then bake for 12 minutes, or until lightly golden.
Remove from the oven and let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
